Add water and cover with lid. When oil is hot, add cumin seeds and asafoetida to it. After sautéing for while, add turmeric powder, coriander powder and sauté the masala for few minutes. Add gourds and salt in the masala and mix really well.

  1. Add 1 tsp oil in pan and add chopped bottle gourd. Stem cook it with little water until pieces become soft.
  2. When bottle gourd pieces are cooled down, put in big bowl. Add chopped onion, tomatoes, curd and salt as required.
  3. In tadka pan, add oil and when it becomes hot, add cumin seeds. Add turmeric, asafoetida, urad dal. Lastly add dry red chilies.
  4. Pour the tempering on raita and serve it.

After sautéing for while, add turmeric powder, coriander powder and sauté the masala for few minutes. Add gourds and salt in the masala and mix really well. Cut tomatoes into quarters (if using cherry tomatoes, leave them whole). Spread the tomatoes, bottle gourd, shallots, garlic cloves, pepper corns on the baking sheet. Drizzle with olive oil and sprinkle with salt and thyme, gently toss.
