The ingredients needed to make Idli and Bottle-gourd Sambhar:
  1. Get For plain Idli-
  2. Get 1/2 cup urad dal (soaked overnight)
  3. Take 1 cup plain rice (soaked overnight)
  4. Make ready as per taste Salt
  5. Take as required Ghee or oil to grease
  6. Get For For Sambhar-
  7. Take 1/2 bowl Toor daal
  8. Get 1 medium sized fresh bottle guard (cut in squares)
  9. Take 1-3 tsp Sambhar powder
  10. Take 8-10 Curry patta
  11. Make ready 1 tsp Chana dal
  12. Take 1 tsp Urad dal
  13. Get 1 tsp Mustard seeds
  14. Prepare 2-4 green red chillies cut in halves
  15. Make ready 1 tsp turmeric powder
  16. Make ready 1 tsp coriander powder
  17. Get 2 tsp Oil
  18. Take 1 tsp Jaggery or shakkar
  19. Get as required Water

Add half cup of water while grinding. This is traditional Tamil Nadu style sambar which is very healthy, with the combination of lentils and bottle gourd. You can replace bottle gourd with other vegetables like brinjal, pumpkin, drumstick, beans, peas or can use mixture of these vegetables. Sambar is a popular South Indian & Sri Lankan dish.

Steps to make Idli and Bottle-gourd Sambhar:
  1. Grind the rice and urad dal and mix together. Put into a large container and let it ferment. After it is fermented add salt and grease the idli stand. Pour a small quantity of batter in stand and steam for around 5-7 mins. Take out if a toothpick inserted in it stands clean.
  2. Heat the oil, add mustard add some seeds, curry patta, urad dal, chana dal, chillies etc. Add turmeric, coriander, jaggery and sauté for a couple of min.
  3. Boil soaked chana dal and lauki along with some salt and cook until done. Add this lauki, chana dal to the Tadka and cook for a few more minutes.
  4. Serve this when hot.

You can replace bottle gourd with other vegetables like brinjal, pumpkin, drumstick, beans, peas or can use mixture of these vegetables. Sambar is a popular South Indian & Sri Lankan dish.
