- Get 2 cups chopped skin of bottle Gourd
- Make ready 1/2 cup chopped potato
- Prepare 5-6 green chillies
- Make ready 2 tablespoons chopped onions
- Prepare 2 tablespoons olive oil
- Take as per taste Salt
Now cover the pan and let it cook on low heat. Add the bottle gourd, salt and turmeric. If the gourd is not tender or less juicy, cover the pan and cook till the gourd is cooked fully. If it is tender just continue to fry without covering till it is fully done.
Instructions to make Bottle Gourd skin fry:
- How to collect and prepare the skin: First what you need to do is cut off a piece from the end and taste it. It is better not to use a bottle Gourd that tastes bitter. Then peel off off the entire skin from the Gourd.
- Cutting and cooking: now, wash the collected skins of the bottle Gourd and finely chop it. Also finely chop the potatoes. Mix the chopped bottle Gourd and chopped potatoes together and wash it. Take it into a pan and boil it 90%. Drain the water and keep it aside.
- Now, take a frypan, put some oil and heat it on stove. Put chopped onions with green chillies and salt as required. Fry it till becomes brown.
- Now, put all the boiled bottle Gourd skin and boiled potatoes into it and stir fry it for 15 minutes covering the frypan in a medium high flame.
- When it's done, stop the flame immediately.
