Stuffed Potato Paneer Capsicum / Bharwa Aloo Paneer Shimla Mirch. Saute the potatoes till they change colour and get lightly browned from the edges. Add the bharwa baingan, stir and saute the baingan for a minute. Then cover the pan and cook the stuffed baingan on a low flame.
Steps to make Bharwa aloo / Stuffed baby potatoes:
- In a bowl add all the dry masala excluding the kasuri methi.
- Wash and peel the skin of the potatoes.
- With the help of a knife slit the potatoes up to 3/4th carefully.
- With the help of a fork prick the potatoes all around.
- Fill the dry masala into the slit and all over the potatoes.
- Once you are done with all the potatoes,take a non stick pan add oil, put a tsp of Kalonji and shallow fry the potatoes till they turn golden brown. Cover and cook the potatoes on a low flame so that it gets cooked by steam.
- Once done sprinkle some kasuri methi and cook for a minute. It’s ready to be served with paranthas or rotis.
Add the bharwa baingan, stir and saute the baingan for a minute. Then cover the pan and cook the stuffed baingan on a low flame. Check a couple of times and stir the veggies. Bharva Aloo Baingan is prepared with small baby eggplants. Baingan are stuffed with indian spices and pressure cooked with potatoes.
