If there is any more liquid left, uncover and cook at high heat, till there is only enough to coat the potatoes and little bit more. Stir in the tomatoes and coconut milk. Increase the heat to medium high. Stir every few minutes to prevent the curry from sticking.
Instructions to make Baby Potato In Coconut Milk:
- Boil the potatoes for 7-8 minutes. Peel off the skin then heat oil in a karahi. Fry the potatoes and remove from karahi.
- In oil add green cardamom, cinnamon, cloves and bay leaves. When they crackles add onion paste. Cook for 1-2 minutes. Add ginger garlic paste and saute.
- Now add salt, sugar, coriander powder, green chilli paste, black pepper. Cook for 2-3 minutes.
- When oil separates from masala then add Coconut Milk. Cook it on medium flame for 2 minutes.
- Now add baby potatoes in the gravy. Boil for 2 minutes. When the gravy become thick switch the flame off.
Increase the heat to medium high. Stir every few minutes to prevent the curry from sticking. Add the potatoes and give it a stir to coat. Serve hot and prepare for creamy deliciousness. Note: Pre-cook potatoes and carrots.. veg. oil, red curry paste, and about one third of the coconut milk.
