The ingredients needed to make Baby Potato Fry:
- Prepare 1/2 kg Baby Potatoes
- Make ready 1 tsp Chilli powder
- Make ready 1 tsp Sambar powder

Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. I am torn between two camps! The really crispy and fluffy camp and the soft and creamy camp. Potatoes like Baby Yukon Golds will be soft and creamy when cooked, so you get a delicious soft inside.
Instructions to make Baby Potato Fry:
- Wash the potatoes. Place a pressure cooker in the stove. Switch on the flame. Add the potatoes and required water. Cook for 2 whistles.
- Once the pressure goes off, open the lid. Take out the potatoes and peel off the skin. Cut the potatoes into two pieces. And place the pieces seperately in a large saute pan.
- Place the sautepan in the stove. Switch on the flame. Keep in low flame.
- Add little oil above all pieces and 2 tsp Oil surrounding all pieces.
- After 5 mins, sprinkle little salt covering all the pieces. Mix well by adding some oil. Separate the pieces as before.
- For each 5 mins add some oil and stir fry it. Separate the pieces as before. Repeat the process for 15 mins.
- Then add chilli powder and sambar powder. Add some oil and mix well. Separate the pieces. Again stir fry it for 10 mins till all the pieces gets roasted on all sides.
- Now it's ready to serve for your lunch.
- You can also add few coriander leaves or fried and crushed curry leaves atlast.
