Add the onions and sauté until softened, scraping up any browned bits from the ribs. Cover with sauerkraut and sprinkle with brown sugar. Cut spareribs into serving-size portions; sprinkle with salt and pepper. In a large skillet, heat oil over medium-high heat; brown ribs in batches.

  1. Spread the sauerkraut in the pan and squeeze half a bottle of Italian dressing over the krat.
  2. Then lay both racks onto or the krat.
  3. Sprinkle heavily the seasonings you like when making bbq ribs. You can make your own rub also.
  4. Bake at 400 for an hour to about 2 hrs. Checking often for doneiness and if they are tender. You can base the ribs the last hour or half hr.
  5. When serving cut ribs and plate up the sauerkraut and the sides you like. I have made this recipe quite often. I have served mashed potatoes, mac n cheese, and greenbeans with the ribs. I have served this with baked beans, potato salad and pasta salad. You want to pair the ribs with sides you would pick for a bbq. Enjoy.
