Spread onto pork spare ribs on a steaming plate in a steamer. Using a sharp knife, cut the slab of ribs between the bones into individual ribs. Remove the ribs, and reserve the broth for soup or freeze for another time. Immediately brush the ribs with the Szechuan marinade, and let cool.

- Fragrant chilli oil: heat up about 5 tbsp of oil in wok, add in cinnamon stick and star anise and cook in low heat till fragrant. Add in spring onion, ginger and cook till aromatic. Then pour the hot chilli oil into the dried chilli flakes and mix well, set aside
- Mix spare ribs with corn starch and salt. Marinate for 30 minutes
- Heat up 1 Tbsp oil, saute chopped garlic, ginger, dried chillies, szechuan peppercorns till fragrant. Add in preserved Black bean and bean paste and stir fry till aromatic. Add sugar, water and mix well. Remove from heat and spread over the ribs
- Drizzle 2-3 tbsp of the fragrant chilli oil over the ribs and steam at high heat for 20 minutes
- Once cooked, remove from heat, sprinkle coriander leaves on top and serve immediately
Remove the ribs, and reserve the broth for soup or freeze for another time. Immediately brush the ribs with the Szechuan marinade, and let cool. Steam spareribs for about three hours or baby back ribs for about two hours, until the meat is tender. Pour the starch water to the ribs, make sure that each piece is well coated. Pick the ribs to a clean deep plate.
